Salads are a super easy way to get your veggie fix, but they don't exactly make you feel warm and fuzzy inside. That's why it's time to start preparing winter salad bowls, a twist on the original with steamy (literally) fixings to keep you toasty.

Cook the ingredients that take the longest the weekend before, and you'll have an incredibly easy weekday lunch that you can throw together in minutes and take with you on the go. These recipes are versatile, so feel free to play around with whatever you have in your kitchen.

1. Colorful Beet Salad With Carrot, Quinoa, and Spinach

Turn a simple salad into a full-fledged meal with hearty ingredients, like beets and quinoa. You'll be well on your way to filling your greens quota if you make this a regular staple. This recipe comes from the super popular cookbook Inspiralized, but you don't need a spiralizer to make it—a sharp chef's knife will do.

2. Kale Salad Bowl With Tahini

Feta, sweet potatoes, kale, and chickpeas—we're loving the flavors in this bowl. The recipe makes four servings, so you can prep everything beforehand, keep it in the fridge, and heat up portions throughout the week for quick and nutritious (not sad) desk lunches. Plus, kale is sturdy enough that you can add the dressing in the morning and it won't wilt before lunchtime.

3. Butternut Squash and Cranberry Quinoa Salad

You can make this entire bowl in 40 minutes—that's including cooking and prep! The sweet tanginess of cranberries and balsamic vinegar mixed with butternut squash and salty toasted pumpkin seeds jazz up the normally bland (but super nutritious) quinoa.

This vegan-friendly recipe takes an hour to throw together. Feel free to mix up your grain: If you don't have quinoa on hand, try millet or spelt berries. Top it off with everyone's favorite, avocado, and don't forget to toss in pepita seeds for that extra crunch.

7. Green Goddess Balance Bowl

This dish is aptly named with a strong balance of nutrients: protein from the quinoa, healthy fats from the avocado and walnuts, and antioxidants from the kale. The recipe also provides plenty of ideas for ingredient swaps (like farro instead of quinoa or chia seeds instead of walnuts), so you'll be able to satisfy even the pickiest of eaters.
